INGREDIENTS
- 1 kg bone-in, skin-on chicken thighs
- Fresh parsley
- Juice of half a lemon
- 1 tsp garlic powder
- 1/2 tsp ground ginger
- 2 tsp mixed herbs
- 2 tbsp olive oil
- Salt & pepper

Instructions
1. Preheat the Oven: Preheat your oven to 200°C (fan) / 220°C (conventional) / 400°F.2. Prepare the Chicken: Pat the chicken skin dry with a paper towel to ensure extra crispy skin.
3. Make the Seasoning Blend: In a small bowl, combine the olive oil, garlic powder, ground ginger, mixed herbs, lemon juice, salt, and pepper.
4. Coat the Chicken: Using an oil brush, thoroughly coat the chicken thighs with the seasoning blend.
5. Initial Bake: Place the chicken thighs on a baking tray and cover with foil, ensuring the foil doesn't touch the chicken. Bake in the oven for 10 minutes.
6. Baste and Continue Baking: After 10 minutes, remove the foil and baste the chicken with the rendered fat. Continue to roast for another 20-25 minutes, depending on the size of the chicken thighs, until fully cooked and the skin is crispy.
7. Garnish and Serve: Top with fresh parsley, a sprinkle of chili flakes, and an optional extra squeeze of lemon juice.
