INSTRUCTIONS
1. Prepare the Shallots:
Place the shallots in a heatproof bowl and cover with boiling water. Let them sit for 10 minutes, then drain and peel.
2. Cook the Shallots:
In a frying pan, heat the olive oil and butter over medium heat. Add the shallots and cook gently for 10-15 minutes until softened and lightly browned. Stir in the balsamic vinegar and brown sugar. Cook for a few more minutes until caramelized. Turn off the heat and season with salt and pepper.
3. Assemble the Tart:
Preheat your oven to 200°C (fan) / 220°C (conventional) / gas mark 6. Prepare a 22cm ovenproof shallow pan or tart tin without a loose base. Add the caramelized shallots and their juices. Roll out the puff pastry to a roughly 26cm circle and place it over the shallots, tucking the edges down inside the pan.
4. Bake the Tart:
Bake for 25-30 minutes until the pastry is golden brown.
5. Finish and Serve:
Let the tart rest for 5 minutes, then carefully turn it out onto a serving plate. Dot with rounds of goat’s cheese and slice into wedges.
STORAGE
Store any leftovers in the refrigerator for up to 3 days. Reheat in the oven to maintain the crispy pastry texture.
Enjoy this flavorful Shallot Tarte Tatin with Goat's Cheese, a perfect addition to your weekend menu!
