A healthy veggie burger with plenty of zing and fresh flavour.
Ingredients
Cauli-burger
190ml Moo Moo Fresh Milk
1 cup Pams plain flour
1⁄2 teaspoon salt
1⁄4 teaspoon ground pepper
2 cups panko crumbs
1⁄4 cup Shaved cheese
1 teaspoon ground Turmeric
1⁄2 teaspoon Smoked Paprika
1 teaspoon dried Oregano
1 Cauliflower, chopped
3 tablespoons Pams Extra Virgin Olive Oil
Jalapeño mayo
1 Tahitian Lime (zest & juice)
1 tablespoon Jalapeños, diced
1 teaspoon Pams Crushed Garlic
1⁄2 cup QP Japanese Mayonnaise
The rest!
Red onion, thinly sliced
Frozen avocado (defrost and mix with lemon juice)
Buttercrunch lettuce
Fresh Coriander
Green chilli, thinly sliced
Gourmet Brioche Burger buns
Tahitian Lime, cut into wedges

Method
Step 1. Combine milk, flour, salt and pepper. Whisk until a smooth batter forms. In another large bowl, combine panko crumbs, parmesan, turmeric, smoked paprika and oregano.
Step 2. Dip cauliflower florets into the batter and then into the panko mixture. Place on the baking tray and drizzle with olive oil. Bake for 20 minutes or until golden, turning half-way through cooking.
Step 3. For the jalapeño mayo, combine the zest and lime juice, jalapeños, garlic and mayonnaise. Season with salt.
Step 4. Cut burger buns in half and grill until golden brown. Smear a generous spoonful of jalapeño mayo on top and bottom bun. Top with red onion, avocado, cos lettuce, coriander, cauliflower bites, and chilli. Season with salt. Serve with lime wedges. Makes for four or a hungry two!
