Fried Diced Beef Steak with Black Pepper Sauce

INGREDIENTS

Beef

500g/ 2 pcs Hellaby sirloin steaks
2, seeded and diced orange/green capsicum
1/2, diced brown onions
2, sliced fresh garlic cloves
1 tbsp olive oil 
1 tbsp Pams wheat corn flour mix with 1/2 cup water

 

Marinade

1 tsp salt
1/4 tsp white pepper grounded
1 and 1/2 tsp sugar
1 tbsp soy sauce
1/2 tbsp sesame oil
1/2 tsp Pams wheat corn flour 
1 tbsp olive oil
 

Black Pepper Sauce

1 tsp sugar
1 tsp soy sauce
1/2 tsp ground black pepper grounded
 
To serve
Sesame seeds

METHOD

For the steak
Wash the sirloin steak and use kitchen paper to dry off excess water.
Trim off excess fat and dice the beef into inch long cubes.
Marinating

Place the diced beef into a large bowl, adding in white pepper, sugar, soy sauce, sesame oil, wheat corn flour. Massage well with hand for about 2 minutes, then mix in the olive oil and set aside for 15 minutes.

Black Pepper Sauce
Combine all the black pepper sauce ingredients in a small bowl, set aside.

 

Assembling
Preheat a frying wok to high heat, add a dash of olive oil and heat to about 140 degrees, add the beef and fry until all sides are browned. Remove beef from the wok and filter the oil.
Use the remaining oil in the wok to fry the garlic, orange/green capsicum and onion until soft, then plate them. Return the beef to the wok, add the black pepper sauce. Continue sautéing until sauce becomes cohesive and plate atop the cooked vegetables.
Before serving, sprinkle with white sesame seeds.
